cinnabon cupcakes.

Pinterest is loaded with cinnabon everything. Cinnamon roll pancakes, cinnamon roll cookies, and just plain cinnamon rolls. I have had two boxes of white cake mix sitting in my pantry with nothing to do for weeks.  I finally decided to combine all of these recipes I have been seeing and make Cinnabon Cupcakes.

I made a runny icing glaze to drizzle on top. They were delicious and just what my white cake mix needed.

So if you have any white cake mixes lying around- make these. Your friends /family /husband /dog /boyfriend will love 'em.

Cinnabon Cupcakes

for the cupcakes:
  • 1 box white cake mix
  • 2 eggs
  • 2/3 cup milk
  • 1/3 vegetable oil
  • 1 cup sour cream
for the cinnamon mixture:
  • 1/2 cup butter melted
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • T cinnamon
Preheat oven to 350 degrees. Line a muffun pan with cupcake tins.

Mix all cupcake ingredients in a mixer until lumps are gone.

Scoop a little bit of cupcake batter into the bottom of a tin. Then drizzle cinnamon mixture on top. Then top  with a little more cupcake batter. Make sure cupcake batter does not exceed 2/3 full. Drizzle more cinnamon mixture on top.

Repeat with all 12 cupcakes.

Cook for 15-18 minutes in the oven.

Combine all icing ingredients. Add more powdered sugar to reach ideal consistency. Drizzle on top of cupcakes and eat with a glass of milk. Yum.
